For those following a veggie and gluten-free diet, Tom Kerridge's simple yet scrumptious whole roast cauliflower makes a stylish meat-free main. The cauliflower is roasted in a buttery baste, giving it a beautiful richness that's balanced by a punchy caper, parsley and lemon zest dressing. As it's a main, we recommend using a large cauliflower rather than the medium size stated. This recipe also makes use of the whole veg by roasting the leaves so they are deliciously crisp.
