Vegan brunch or breakfast
Every mum deserves the best on Mother's Day, that's why you should kick things off with a stack of vegan banana pancakes with fresh berries, a drizzle of maple syrup and a cuppa, of course. These are a guaranteed crowd pleaser and, with a texture this light and fluffy, no one would guess they're vegan.

We've added a dash of soy sauce and red wine to the lentil filling to boost the rich, umami flavour, before topping it with a vibrant sweet potato mash. Serve alongside some steamed seasonal greens, dressed with a little salt and olive oil.
For an impressive pastry-based main, try our savoury beetroot & red onion tarte tatin. Or keep it classic and make our delightful nut roast with vegan 'cheesy' leek crumble and vegan roast potatoes.
