1. One-pan lamb with hasselback potatoes
Take your roast game up a notch with this beautiful lamb dish, flavoured with lemon, herbs and garlic. The meat and crisp hasselback potatoes are cooked in one dish, intensifying the flavours (and meaning less washing-up). Pair with a punchy green olive & herb dressing and some spring greens.
2. Veggie spiral pie with spiced tomato sauce & chopped salad
This pastry parcel is packed with rice, feta and spinach, wrapped in buttered filo and wound into a beautiful coil shape before baking. The recipe requires quite a bit of space in the kitchen and some patience as you work with the pastry – but the end results are seriously impressive. A pie with real wow factor.
3. Crab & asparagus pappardelle
Treat mum to this delicious seasonal dish. Dressed crab pairs perfectly with asparagus and the fresh egg pasta. We've added a luxurious touch of crème fraîche and finished with parsley, chives and hazelnuts. Serve with homemade garlic bread toasts for bonus points.
4. Thai green curry roast chicken
Combine the aromatic umami flavour of a Thai green curry with a succulent whole chicken for a fabulously fresh take on Sunday roast. Serve alongside roasted sesame sweet potatoes & asparagus or toasted coconut rice.

6. Herby chicken spring pot pie
The pie's the limit with this tasty, crispy one-pot chicken pie. Spring onions, mustard and herbs add plenty of flavour, while crème fraîche brings richness. Even better, it's in the oven for just 30 minutes and takes just 10 minutes to prepare – that's more time to raise a toast with mum.
7. Beetroot & red onion tarte tatin
This showstopping vegan tart is packed with flavour, including star anise and orange zest. It's ideal as a centrepiece – serve with crispy roast potatoes, chopped green salad and lemon & parsley butter beans.
