Method

  • step 1

    Thoroughly rinse the chickpeas in a colander under cold running water. Tip into the large bowl of a food processor along with 60ml of oil and blitz until almost smooth.

    Add the garlic, lemon and tahini, and blitz again. If the consistency is too thick, gradually pour in up to 30ml more water. Blitz again for about 5 mins, or until the hummus is smooth and silky.

    Season with a good pinch of sea salt and transfer to a bowl. Swirl the top of the hummus with the back of a dessert spoon and drizzle over a little olive oil. Serve with crunchy crudités and toasted pitta bread, if you like.

Had no tahini so used peanut butter. Added a dash of sweet chilli sauce, some chilli flakes and a bit of salt. I know it sounds disgusting but it’s really delicious!

I made this today for the first time, I used my Smoothie Maker as I haven’t got a food processor - it’s on my shopping list. I added a chopped Red Pepper & a touch of Paprika to it - yummy.

We tend to buy bags of dried chickpeas and cook them in a slow cooker. They taste better than tinned. The cooking water adds to the flavour as well. Olive oil is expensive nowadays but a fairly good olive oil certainly adds to the flavour as does extra garlic and chilli peppers to taste.

I drained the oil from settled tahini, while blending I added water, then lemon juice, this reduced calories, flavour was still amazing

Can you freeze this?

Hello, yes homemade hummus can be frozen. Freeze in an airtight container for up to two months. Defrost overnight in the fridge. It will need a good stir before serving. Thanks for your question - Good Food Team
