Method

  • step 1

    Heat the butter in a large saucepan. Add the spring onions, leek, celery and potato. Stir and put on the lid. Sweat for 10 minutes, stirring a couple of times.

  • step 2

    Pour in the stock and cook for 10 – 15 minutes until the potato is soft.

  • step 3

    Add the spinach and cook for a couple of minutes until wilted. Use a hand blender to blitz to a smooth soup.

  • step 4

    Stir in the crème fraîche. Reheat and serve.

Delicious soup, i did have to change it slightly as no spring onions. I use whole brown onion ,2 small carrots, garlic granules, ground ginger and alittle milk before serving. This recipe is a keeper

It doesn’t say when to put in the ground pepper. Or it doesn’t matter…?

From my experience, it's better to grind the pepper in at the end. If you blitz it through the soup, you just get a uniform pepperiness, rather than bursts of its flavour, which to me at least, is much nicer!

Lovely soup...made a big batch with a kilo of spinach , doubled all the other ingredients plus 1 carrot and a heaped teaspoon of nutmeg.
