Method

  • step 1

    Preheat the oven to fan 180C/conventional 200C/gas 6. Boil the potatoes for 10 minutes until tender. Meanwhile, whisk the mustard, orange juice and honey together in a bowl to make a marinade. Turn the salmon fillets in the marinade until evenly coated, then set aside. Deseed the peppers and cut into thick strips.

    Drain the potatoes and tip into a shallow ovenproof dish or roasting tray with the peppers and sugar snap peas. Drizzle over the oil, salt and pepper, then toss everything together. Put the salmon fillets on top of the vegetables and pour over the marinade. Bake for 20-25 minutes until the salmon is cooked and just starting to brown.

Well, 16 years after my first review. Still making, still loving it. But tend to roast potatoes for 15 mins or so before adding rest.

Made this for two of us last night. Delicious. I will definitely make it again, however I will cook the potatoes and peppers in the oven oil in the oven for at least 15 minutes to char them a bit before adding the salmon, sugar snaps and marinade

I love this recipe but have tweaked it slightly. Ensure you add salt when boiling the potatoes, when boiled I add freshly crushed garlic, olive oil and the veg mix it up and then pour into the baking tray. I use carrots, peppers, sugar snaps, brocoli and baby corn to the potatoes. For the marinade…

Prompted to comment by the last couple of negative remarks. I have been making this regularly for the last few years and it is super simple and delicious. I swap the orange juice for lemon and do the whole amount of sauce/marinade for the two of us.

This is the first BBC recipe I have been prompted to comment on, purely as it just doesn't work well. The salmon was cooked before the potatoes and the sauce was insipid. The vegetables seemed flavourless in this dish.Dry and uninspiring. Give this one a miss.
