Ingredients
- 1 bunch of mint, finely chopped
- 1 tbsp caster sugar
- 2 tbsp red wine vinegar
Method
- STEP 1
Combine the mint, sugar and vinegar in a heatproof bowl.
- STEP 2
Season with salt and pepper, pour in 4-5 tbsp boiling water and mix to combine.
