Method

  • step 1

    Put the coriander stems and garlic in a food processor, pulse until finely chopped, add the turkey and 1 tsp of the fish sauce, and blend again. Roll into meatballs about 3cm in diameter.

  • step 2

    In a saucepan, heat the tom yum or curry paste with a splash of water for 2-3 mins. Pour in the coconut milk, stock, lime zest and juice, and remaining fish sauce. Bring to a simmer, add the meatballs and cook for 3 mins. Add the vegetables and cook for 5 mins more, or until the meatballs are cooked through.

  • step 3

    Add the noodles to warm through just before serving. Season, pour into 2 bowls and top with coriander leaves.

Ideal midweek family supper recipe; economical, really tasty and easy, but would suit guests perfectly well too. Very tasty soup. I have used dark soya sauce as substitute to fish sauce, only because didnt have at the time and added some sugar to the liquid. It will be our regular meal. Thank you

This will be a regular meal for us. I chopped my own veg and included bok choy for the first time of ever using it. Yup liked it! How nice it is to follow a recipe devised especially for two people, very much appreciated

Excellent meal, really tasty we've eaten it many times in a couple of weeks. The only thing I have done , is to use just one lime as the other members have suggested and it's worked a treat .

Absolutely delicious! I was looking for a way to use up turkey mince and this was just yum! I used less lime juice (by about a third) plus I added ginger & 1 red chilli to the meatballs. Could use pork mince too for variation. Added to our regulars list!
