Method

  • step 1

    Peel and stone avocados and put in a bowl. Mash using a fork until fairly smooth, but with a little texture. In a small bowl, mix together lemon juice, Tabasco sauce, chilli, coriander, onion, olive oil and salt. Fold this through the avocado. Make it just before serving and don’t put it in the fridge.

Avocados, fresh coriander, freshly squeezed lime and salt. In Mexico many restaurants will make it for you from scratch at your table using just these 4 ingredients. You really don't need all the extra gunk.

Remove olive oil, Tabasco and lemon juice and add 1 tomato, lime juice and a pinch of cumin.

What would you serve this with, please, other than on toast?

Thanks for your question. You can serve this as a dip with tortilla chips or cut up vegetables. It's also great as a side dish to fajitas, chilli con carne or burritos.
