- 150ml natural yogurt
- 10 mint leavesroughly chopped
- 1 large cucumbercoarsely grated then squeezed in a clean tea towel to get rid of excess water
- 1 lemonjuiced

Mix everything together in a small bowl with a pinch of salt. (Can be made a day ahead.) Try it drizzled over slow-cooked Greek lamb with chickpea salad.
