Method

  • step 1

    Follow our triangular bread-thins recipe to make your own.

  • step 2

    Cut the bread thins in half, put cut-side up and spread with the goat’s cheese. Top with the cucumber and tomato, then scatter over the olives and top with the rocket. Eat straight away or pack into lunchboxes for later.

I don't know what rocket leaves are, so I used spinach. Came out pretty good. I used ritz crackers. Made 12. Was supposed to be a snack. I think this will be a perfect appetizer for guests. The kalamata olive made it perfectly salty. I quartered mine.

Is this recipe designed to serve two, meaning 1.5 triangles each?

Thanks for your question. Each of the three triangular bread thins are cut in two, making six between two people.

I am not a fan of cucumber but found that the goats cheese masks the taste. I would make it again
