Method

  • step 1

    Whisk together the eggs, milk, cream, vanilla and cinnamon. Lay the brioche slices in a single layer in a shallow dish and pour the egg mixture over them. Allow to soak for 2-3 mins, then carefully turn over and soak for 2 mins more.

  • step 2

    Heat 1 tbsp of the vegetable oil and butter in a non-stick frying pan over a medium heat until foaming. Carefully lift 2 slices of the soaked brioche out of the dish and add to the frying pan. Fry for 3 mins on each side, until golden and crisp, then place on a wire rack over a baking tray in a warm oven while you repeat with the remaining slices.

    Serve dusted in icing sugar and scattered with fresh berries, if you like.

Works a treat everytime. The cream gives a richness which is even better when you're stretching the recipe out with a few extra slices of brioche!

Made this today, it worked really well.

Does not taste of anything... I used extra cinnamon and vanilla in the mix, let it soak up in the brioche for hours, and it tasted like nothing, the absolute faintest hint of cinnamon, even though I put extra in and made a cinnamon sugar for ontop so I could taste something. I'd find another recipe…

Maybe add a bit of sugar to the mixture next time to bring out the taste of cinnamon - it does depend on what flavours you're used to. Also, the type of oil in the pan can deaden the flavours, or overcooking it... Experiment with the recipe - it's worth it!

No I always make this recipie and I have never used double cream.
