
Cinnamon cashew spread with apple slices

This simple spread has only a handful of ingredients and makes a handy vegan snack. Spread it on apple rounds for an easy way to get one of your five-a-day

- 50g unroasted cashew nuts
- 1 tbsp coconut oil
- ½ tsp cinnamon
- 2 applessliced straight across into rounds
- 2 generous lemonswedges, for squeezing over

Method

Pour boiling water over the cashew nuts in a small bowl to cover, and leave for 2-3 mins so they soften a little. Drain, then return to the bowl. Add the coconut oil and cinnamon and blitz with a stick blender to chop the nuts into a rough paste. Serve with the apples slices and lemon wedges.
