Method

  • step 1

    Put most of the pistachios (reserving some to garnish) in a food processor. Add the vinegar, maple syrup and oil, and blitz for a few seconds until slightly smooth. Season to taste with salt and black pepper.

  • step 2

    Combine the remaining salad ingredients in a serving bowl. Pour the pistachio dressing over the top and gently fold through. Sprinkle with the remaining pistachios and season with more salt and black pepper.

Made for as a bbq side but used regular feta instead of vegan. And didn’t bother blending the pistachios into the dressing, just chopped and sprinkled into it. Was delicious and so easy to make. Will definitely do again!
