A light curry that is really tasty. Very quick and easy to cook.

Ingredients

  • 2 Salmon Fillets - marinade in juice of 1 lemon and 2 tsp Cumin
  • 1tbsp Veg Oil or mustard oil
  • 1 onion
  • 2 cloves garlic
  • 2cm ginger
  • 1 tbsp cumin
  • 1 tsp coriander powder
  • 1/4 tsp chilli powder
  • 150ml vegetable stock
  • 1/2 tin of chopped tomatoes
  • Fresh Coriander roughly chopped

Method

    1. Mix together the lemon juice and 2tsp of cumin in a bowl. Then add the salmon fillets and leave for at least 10 minutes.
    2. Heat the oil and fry onion, ginger and garlic. Cook until onion is soft.
    3. Add the cumin, coriander and chilli then the tomatoes and veg stock, stiring.
    4. Add the salmon to the pan and cook gently for 10 - 15 minutes until the fish is cooked.
    5. Add the fresh coriander and serve

Made this last night. Amazing!!! I took the skin off the salmon and cut it into large chucks. Cooked the sauce for a bit longer say 20-25min then reduced heat and added salmon for 15 min. The salmon stayed soft and moist. Just needs a bit if seasoning Try it you won't be disappointed Thanks for sharing more please

Very easy and super fast to prepare. I put diced tomatoes and Curry powder and tasted !delicious!

Quick, easy, great for midweek supper. I added sweet potato and mushrooms. Halved the oil and served with cauliflower rice. Low cal and 3/5 a day.

I added 4 ripe fresh tomatoes instead of the tinned ones and a couple of handfuls of chopped fresh spinach at the end for texture (and added health benefits!). Very quick and easy.
