Method

  1. Boil the spaghetti following pack instructions. Meanwhile, heat the oil in a non-stick pan. Add the carrots, celery and bacon, and stir well. Cover the pan and cook, stirring occasionally, for 10 mins until the veg has softened.

  2. Tip in the pesto, warm through, then stir through the drained spaghetti with the basil, if using.

Have made this several times and goes down really well even with some fussy eaters! First time doubled the recipe for a crowd but accidentally only used the amount of pesto for four, but actually preferred with the lesser amount, so now use around half, or to taste. Lovely recipe though, very quick and easy.
