• 2 sachets yeast (0.5 onz)
  • 2 tbs sugar
  • 0.25 extra virgin olive oil and more for brushing
  • 2 tsp salt
  • 4 cups plain flour
  • 1.5 cups warm water


  • STEP 1
    Put water in a bowl and stir in 1 tbs sugar Sprinkle yeast on top Cover and leave 5 mins till frothy
  • STEP 2
    Whisk oil and remaining sugar and together Add to yeast and water
  • STEP 3
    Add flour and stir into sticky dough Use oiled fingers or wooden spoon
  • STEP 4
    Transfer to oiled container Brush top with oil Cover with cling film and leave to prove in warm draft free place till double in size about 1 hour
  • STEP 5
    Turn out onto lightly floured surface and knead very lightly Cover dough balls in flour to prevent sticking
