- STEP 1
Separate the eggs and put the egg whites, vinegar, salt, sugar and 1 tbsp of the oil in a large bowl. Boil a kettle then mix 125ml of the boiling water with 125ml of cold water. Put the water in the bowl with the other ingredients mentioned above, and whisk well.

Mix the flour and yeast in a separate bowl and then add them to the liquid ingredients. Then mix everything into a smooth, thick dough, adding a little bit more water if needed.

Grate the cheese, (Parmesan is recommended) and add to the dough. Also add olives, halved or whole. Drizzle the remaining oil over the dough, and turn with a wooden spoon, incorporating the cheese, olives and oil into the mixture.
- STEP 4
Grease a 2lb loaf tin and transfer the dough into it. Spread evenly with a knife. Cover with a damp tea towel and leave in a warm place to rise (minimum 1 hour).
- STEP 5
Pre-heat the oven to oven 220C/Fan 200C/425F/Gas 7. Bake for 45-55 minutes depending on how thick you want the crust.
