Ingredients
Required:
- 2 Egg Whites
- 3 tbsp Olive or Vegetable Oil
- 1 tsp White Wine Vinegar
- 2 tbsp Granulated Sugar
- 2 pinches of Salt or Garlic Salt
- 250ml Water (made up of 125ml of boiling water and 125ml of cold water)
- 1 sachet of Quick Yeast
- 500g Doves Farm Gluten Free White Bread Flour
Optional Ingredients:

- 250ml Water (made up of 125ml of boiling water and 125ml of cold water)
- 1 sachet of Quick Yeast
- 500g Doves Farm Gluten Free White Bread Flour
- Olives - to taste
- Any cheese (Parmesan is recommended), grated. Several handfuls or to taste
Method
- STEP 1Separate the eggs and put the egg whites, vinegar, salt, sugar and 1 tbsp of the oil in a large bowl. Boil a kettle then mix 125ml of the boiling water with 125ml of cold water. Put the water in the bowl with the other ingredients mentioned above, and whisk well.
- STEP 2Mix the flour and yeast in a separate bowl and then add them to the liquid ingredients. Then mix everything into a smooth, thick dough, adding a little bit more water if needed.
- STEP 3Grate the cheese, (Parmesan is recommended) and add to the dough. Also add olives, halved or whole. Drizzle the remaining oil over the dough, and turn with a wooden spoon, incorporating the cheese, olives and oil into the mixture.
- STEP 4Grease a 2lb loaf tin and transfer the dough into it. Spread evenly with a knife. Cover with a damp tea towel and leave in a warm place to rise (minimum 1 hour).
- STEP 5Pre-heat the oven to oven 220C/Fan 200C/425F/Gas 7. Bake for 45-55 minutes depending on how thick you want the crust.
