These tasty, all-natural nibbles from sports nutritionist James Collins make a speedy snack and energy boost for on-the-go runners
- STEP 1
Blend the dates and vanilla extract using a food processor or stick blender with 2 tbsp water. Add the ground almonds and spices and pulse until combined. You may need to add extra ground almonds, 1 tsp at a time, to firm them up.
- STEP 2
Fold through the flaked almonds and pecans. Empty onto a greased baking tray and press until flat and even. Chill in the fridge until set.
- STEP 3
Turn out onto a chopping board and cut into bite-sized pieces.
