This slightly sweet and tangy dressing is creamy and perfect with bitter greens and wild grasses. A fresh accompaniment with aged cheeses.

- 2 over-ripe pears
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- ¼ tsp sea salt
- black pepper (optional)
- ¼ cup roasted walnuts, finely chopped
Method
step 1
Peel and core pears. If hard, poach in water for 5 minutes.step 2
Place in a food processor and add oil, vinegar, salt and pepper and puree until creamy and smooth.
