  • 2 over-ripe pears
  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • ¼ tsp sea salt
  • black pepper (optional)
  • ¼ cup roasted walnuts, finely chopped

Method

  • step 1

    Peel and core pears. If hard, poach in water for 5 minutes.
  • step 2

    Place in a food processor and add oil, vinegar, salt and pepper and puree until creamy and smooth.
