  • 2 garlic cloves, crushed
  • 2 tsp each ground cumin and coriander
  • 140g long grain rice
  • 850ml vegetable stock
  • 400g can chopped tomato
  • ½ small bunch coriander, leaves picked


  1. Split the sausage skins, squeeze out the meat, then roll it into small meatballs about the size of a large olive. Heat the oil in a large non-stick saucepan, then brown the meatballs well on all sides until cooked – you might need to do this in batches. Set the meatballs aside.

  2. Add the onion and garlic to the pan. Soften for 5 mins, stir in the spices and rice, then cook for another min. Pour in the stock and tomatoes. Bring to a simmer, scraping up any sausagey bits from the bottom of the pan. Simmer for 10 mins until the rice is just cooked, then stir in the meatballs with some seasoning. Ladle into bowls, scatter with coriander and serve with crusty bread.

recipe was tasty, wasnt really a soup, turned out more like risotto but was nice alternative for sausages!

Went down an absolute treat with my flatmates! A great student/cheap but delicious and filling meal! Added a bit less water than stated so it wasn't too much of a soup! Probably needs a bit more seasoning.

Really enjoyed this recipe, I actually prepared this in the slow cooker and it worked out great, will definitely cook again!

I am teaching my children to cook and this was a great recipie to start with. Simple to make and very tasty - clean plates all round.

I halved the stock and cooked the sausages before chopping them. Reallly tasty and easy to make, will be making again soon!

I used toulouse sausages for extra garlickyness. I did find it took longer to cook the rice than the specified 10mins but this wasnt a problem. All in all it was lovely and I will make it again.

This is utterly delicious and equally favoured by fussy middle-aged men and children! When in a rush I have cooked the sausages whole and then chopped them to dispense with the fiddling about. It works equally well. I have also used pork mince which also works a treat. I often add extras: peas, diced carrot, broccoli spears etc to get this up t a 5-a-day meal. When weight-watching use spray oil and reduced fat sausages or lean minced pork.

Didnt enjoy this as much as I thought i would, maybe I added too much cumin and coriander but i just didnt enjoy the flavour
