  • 1 small vegetarian Camembert or other rinded soft cheese, sliced with the rind on
  • 1 tbsp thyme leaf


  1. In a shallow microwavable dish toss the leeks in half the butter and cook on High for 5 mins until they begin to soften. Stir in the cabbage and mushrooms and add the crème fraîche. Lay the potato slices over the vegetables pressing them down with a fish slice.

  2. Dot the potatoes with the remaining butter and microwave, uncovered, for 15-20 mins on High until they are done. Scatter over the cheese and thyme, and either microwave on High to melt for 2 mins, or grill until crisp and brown. Leave to stand for a few mins and serve straight from the dish.

loved this. great for the sunday cook up ready for the week ahead- freezes well! second time I made it I added the left over chicken from the Sunday Roast- the pickings off the bones that you never know what to do with- very nice! sprinkle a little grated cheese on top as well which adds an extra bite to the Brie

This was actually surprisingly better than I thought that it would be considering the mixed reviews, I finished it off with the camembert in a hot oven for 20 minutes and the whole thing was tasty and delicious.

our microwave blew up the night before making this dish so i par-boiled the potatoes and sauted the leeks then layeres all the ingredients them shoved in the oven for 40 mins....oh and i added a clove of garlic to the leeks....delish!

Don't normally cook with a microwave, so I was a bit tentative about this, but it turned out wonderfully and was so much faster than using an oven! I put the cheese under the potatoes so it melted into the veg. But please use real cheese for this recipe - "camembert light" is never the answer.

most disgusing rescipe i've ever tasted! would not do it again. even the dog turned his nose up. if you've not got any taste buds or taste try this.

@jipington, Well, do not use Camembert light then. It's plastic in a box. If you want to eat low fat, don't eat Camembert. If you want to eat Camembert, eat the real stuff.
