Our spiced sweet potato burger with avocado and basil salsa is the hearty vegan burger of dreams. Try mixing it up and serving with some carrot fries for an extra dose of veg. Or go for a simple South Indian-style chickpea curry that uses basic, storecupboard ingredients. You could try pairing it with a spinach, sweet potato & lentil dhal for a feast to entertain friends – and don't forget the coconut rice

4. Vegan pasta bakes

If this vegan mac 'n' cheese doesn't whet your appetite, nothing will. Nutritional yeast gives this dish that special cheesy flavour, while a mustardy cashew nut base mix gives it that classic creamy texture we all know and love. Top with panko breadcrumbs for a crunchy layer of golden-brown goodness.

We love a rich lentil lasagne, too – a slice of carb heaven and perfect for feeding a family. Or, do something different with your lasagne sheets and try our mushroom & chestnut rotolo in a fetching honeycomb design. Serve it as a showstopping dinner party main, or a seriously indulgent weekend dinner.

5. Vegan chilli bowls

Chilli, minus the carne, is one of the most easily adaptable comfort foods there is. You can feel virtuous tucking into our really easy veggie chilli – it counts as four of your five-a-day and needs just four ingredients to make, so it's a real midweek time-saver. Go for a hearty mix of sweet potato & black bean and serve with nutty quinoa for a filling and flavoursome supper. Or cram your bowl with pulses and colourful veg to make our vegetable & bean chilli. It can be prepped in a grand total of 10 minutes.
