On breakfast and brunch menus everywhere, this once exotic green fruit has become a British staple. With its creamy flesh, the avocado is a filling way to start the day, generously spread on toast. We love it on a good, thick slice paired with a runny poached egg and something salty like bacon, or a sprinkling of crumbly feta.

1. Avocado on toast with chorizo & fried eggs
Make a speedy avocado toast with chorizo and a dippy egg – it’s super simple and characterised by the bold, spicy flavour of the sausage. Crunchy pumpkin seeds add texture and a squeeze of lime with a few chopped coriander leaves bring freshness and zing. Minimum effort for maximum taste.
2. Crisp bacon & avocado on toast
Switch up your BLT with bacon, cherry tomatoes and avocado and leave it open-topped. A sprinkling of chilli flakes packs a little bit of heat – sure to perk you up for a busy day ahead – but that is balanced out by the sweetness of the tomatoes and the cooling creaminess of the avocado.
3. Poached eggs with avocado & feta on toast
Worth getting out of bed for, the salty tang of feta beautifully complements the avocado in this easy 10 minute recipe. Another sprinkling of chilli is optional, but a runny poached egg is a must to bring all the flavours together. One for the veggies, too – it has everything you want from a breakfast, including a good dose of protein.
4. Boiled egg, quick pickle & avocado on toast
For the more adventurous, this colourful plate of avocado with pickled radishes also features a boiled egg instead of a runny yolk. That means it better combines with the sharper-tasting veg and also offers a contrast with their crunchy texture. Pat yourself on the back because the dish also counts as two of your five-a-day.
5. Mexican beans & avocado on toast
For a really substantial brunch, try this vibrant mix of Mexican beans with avocado. It’s healthy, easy to make and a tasty twist on beans on toast. With heaps of cherry tomatoes, black beans, onion and plenty of spices, this is also a great option for veggies and vegans.
