  1. Mix the tomatoes, ¼ onion, lime juice and 1 tbsp oil and set aside. Fry the remaining onion in 2 tbsp oil until it starts to soften. Add the garlic, fry for 1 min, then add the cumin and chipotle and stir until fragrant. Tip in the beans and a splash of water, stir and cook gently until heated through. Stir in most of the tomato mixture and cook for 1 min, season well and add most of the coriander.

  2. Toast the bread and drizzle with the remaining 1 tbsp oil. Put a slice on each plate and pile some beans on top. Arrange some slices of avocado on top, then sprinkle with the remaining tomato mixture and coriander leaves to serve.

This was so good, I invited a friend over to share this breakfast. I only used one can of black beans and half of a red onion. I added a few more things to the tomato mixture such as a potato, spinach, parsley, rosemary. To season, I went with all purpose seasoning, oregano and am char masala. The only criticism was that it was a bit messy to eat. All in all, a great breakfast.

Made the beans only as a filling for breakfast burritos and they were lush, I added only some seasoning, the other half of the lime juiced and a drop of sweet chilli to balance the flavour a bit. Gorgeous.

Love this dish but I tend to have for lunch rather than breakfast.

Too full on for me for breakfast, but makes a nice lunch or light dinner. Also nice with some bacon When you want a little more and aren't vegetarian obviously, though I guess veggie bacon is fine
