Method

  • step 1

    Melt butter in a large frying pan with a lid. When it is foaming, add potatoes. Shake well so they are covered in butter and in a single layer. Sprinkle over a little salt.

  • step 2

    Cover and cook gently for about 30 mins, tossing the pan frequently, until the potatoes are tender. Leave them in the hot butter until ready to serve and sprinkle with salt and pepper.

These are a family favourite, I also sometimes add hard herbs or garlic to vary the taste. If you use a cast iron skillet with a lid on a very low heat they can slow cook over approximately an hour which frees up your time for the rest of your menu.

Keep them on the move and then they are simply lovely. I was surprised that they didn't need pre-boiling, but they really didn't.
