  1. Heat oven to 220C/200C fan/gas 7. Pop the chicken, skin-side up, in a large roasting tin with the potatoes. Lightly crush the garlic cloves and nestle among the chicken pieces. Drizzle over the olive oil and chicken stock, then season. Squeeze over the juice from the lemon and pop the empty halves in the tin.

  2. Bake for 45-50 mins, adding the courgettes and chilli 15 mins before the cooking time is up. Remove from the oven when the chicken is cooked through and golden, and the veg is tender. Stir through the basil leaves and serve.

Very simple dish and the whole family enjoyed it. I had double servings (8 ppl) as I had some ppl over and one in a shallow pan and another in a deeper pan. The shallower pan had less liquidity and potatoes were crispier. The deeper pan had alot of liquid remaining at the bottom and potatoes went a little soggy. TIP:. Spread out the potatoes and chicken on a large shallow pan to ensure the food is crispy

So delicious! Such a nice, straightforward one-pan dish. Lovely midweek meal. The lemon lifted the garlic nicely.

Delicious. Added a couple of quartered onions and added to the stock towards the end of the cooking time. didn't put in any potatoes and served with rice. Looked very professional when arranged on the plates. We will definitely have this dish again

This is amazing - potatoes are lovely and roasted, chicken is delicious and I suggest serving with carrot and leek instead of courgettes. Very tasty, I have made this twice and intend to make it many more times as it is a firm favourite! Thank you for this great recipe.

Unfortunately, this review will divide opinion because I thought it was OK-fine, but my other half really didn't like it. He thought it was just like boiled potato served with the remains of a thin sauce and boiled chicken. I don't know what he expected from a dish I'd verbally described, but there you go! So I'm afraid I won't be making this again, but if you do try and serve with other veg (eg mushrooms or a side of a good salad) don't spoon the sauce over the chicken - because all you'll be left with is some watery sauce at the bottom of the plate.

I made some changes to the recipe based on the ingredients I had to hand: -carrots and leeks instead of courgettes - a Jalapeno chilli instead of a read chilli - boneless, skin-removed chicken breasts I've given it 4 stars as it was very tasty for such a simple, one-pot dish.

This dish is so simple yet delicious. I was nervous about the hefty amount of garlic that the recipe stated, but if you dig out the crushed bulbs before serving the meal it is not too garlicky at all. Will definitely make again.

Very simple and tasty..Left out the courgettes and the chili though, used dried basil right from the start, and crushed garlic instead of bulbs
