  • 1 tbsp vegetable oil

    chopped
  • 1 tsp ground coriander
  • 1 potato
    chopped
  • 450g carrots
    peeled and chopped
  • 1.2l vegetable or chicken stock
  • handful coriander
    (about ½ a supermarket packet)

Method

  • step 1

    Heat 1 tbsp vegetable oil in a large pan, add 1 chopped onion, then fry for 5 mins until softened.

  • step 2

    Stir in 1 tsp ground coriander and 1 chopped potato, then cook for 1 min.

  • step 3

    Add the 450g peeled and chopped carrots and 1.2l vegetable or chicken stock, bring to the boil, then reduce the heat.

  • step 4

    Cover and cook for 20 mins until the carrots are tender.

  • step 5

    Tip into a food processor with a handful of coriander then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

This time i added .. 1 tsp Cumin 1 tsp Corriander 1/2 tsp Tumeric 1/2 tsp Kashmiri chilli powder.......it's very mild, if using normal chilli powder add less ......add all this to the cooked onions. Not bad, too much coriander and not enough carrot in terms of flavour. Also did just 1L of stock which was a nice consistency. Defo needs salt and pepper, and finished with a dollop

Watch the video first... the chef adds to (and omits) what's in the written recipe and the order of things. Eg no mention of a potato but he adds garlic, cumin and creme fraiche. Maybe the video is a guideline but don't put with a recipe of the same name. In the video he puts the 🥕 in before…

Very quick and easy to make. I adjusted flavourings after some reviewers said it was bland. I added 1tsp of cumin and 1/4 tsp of chilli, seasoned with salt andpepper. Delicious

I add ground cumin (1tsp) at the same time as the coriander, and grate a thumb-sized piece of ginger into it sometimes if I fancy some heat. Also occasionally add a squeeze of orange juice which picks it up and brightens it. Unless you have exceptionally tasty carrots it needs some boosting.
