Method

  • step 1

    Put the double cream, mascarpone, marsala and golden caster sugar in a large bowl.

  • step 2

    Whisk until the cream and mascarpone have completely combined and have the consistency of thickly whipped cream.

  • step 3

    Pour the coffee into a shallow dish. Dip in a few of the sponge fingers at a time, turning for a few seconds until they are nicely soaked, but not soggy. Layer these in a dish until you’ve used half the sponge fingers, then spread over half of the creamy mixture.

  • step 4

    Using the coarse side of the grater, grate over most of the dark chocolate. Then repeat the layers (you should use up all the coffee), finishing with the creamy layer.

  • step 5

    Cover and chill for a few hours or overnight. Will keep in the fridge for up to two days.

  • step 6

    To serve, dust with the cocoa powder and grate over the remainder of the chocolate.

tip

If your like me and don’t like spice would recommend and korma sauce instead of the masala. Don’t know how the shops make it white 😄. Tasted traditional but too spicy

I find that Patax works well for the flavour and isn't too spicy 👍. I think the shops bleach it (just more nasty chemicals 😬) the colour is more authentic this way!

This is NOT an authentic recipe. Italian Tiramisu doesn't have cream in it.

I felt there was far too much cream, which actually didn't have much taste, if I make it again, I'll use less cream and add the marsala to it. The sponges tasted nice but definitely needed more than the recipe states.

I made this 2 weeks ago for a dinner party and it was a huge success, everyone loved it. I’m making it again for my friends coming over tomorrow night. Hint: let the coffee mixture cool before soaking the fingers so that they soak up the liquid without going too squidgy. Also, definitely make a day…
