  • 1 onion
  • 3 mushrooms
  • 1/2 red pepper
  • 1 tomato
  • 1 x 10ml spoon oil
  • 150g long grain rice
  • 1 x 5ml spoon vegetable stock powder or cube
  • 550ml boiling water
  • 50g peas
  • 1 x 10ml spoon curry powder
  • Equipment:
  • Chopping board
  • Knife
  • Sauce pan
  • Wooden Spoon
  • Measuring Spoon
  • Weighing Scales
  • Kettle
  • Measuring Jug


    1. Prepare the vegetables: 1. Peel and chop the onion 2. Slice the mushrooms 3. Deseed and dice the red pepper 4. Chop the tomato
    2. Fry the onion in oil until soft.
    3. Add the mushrooms and red pepper and cook for a further 2 minutes.
    4. Stir in the rice.
    5. Mix the stock powder with the water.
    6. Add the stock, peas and curry powder to the rice mixture.
    7. Simmer for 15 minutes, until the rice is tender.
    8. Serve the rice in a bowl and sprinkle the chopped tomato on top.

Great recipe and very versatile! I made this for my toddler, so used low sodium stock and added extra peas, sweetcorn and frozen spinach. I left out the tomato and mushrooms as I didn't have any. I will definitely be making this again!

I use this recipe a lot, but I use a Caribbean curry powder in place of standard curry powder. It's lovely, and so easy to make! I usually eat it with halloumi but it is a very versatile side dish

Really tasty and easy to make.Would be lovely as a side dish for a bbq or buffet.

I made this the night before to take to work the next day, I didn't have any tomatoes or mushrooms but followed the rest of the ingredients and put in some finely chopped carrot too, which I fried at the same time as the onions, then added the curry powder and cooked that off a bit too. Good way to have a tasty lunch when you don't have much in.

So easy and tastes fab. Left out the tomato and substituted sweet corn as others had suggested. I also added the curry powder when frying the vegetables. Would make again for sure.

Wow,thank u so much ,just cooked it and I used brown rice.didnt have any pepper so I put sweet corn in and I did fry the curry powder after I fried red onions and garlic ...lovely

A lovely tasty rice recipe. For something a bit special add muscles and prawns to the cooked rice. Scrummy on a buffet table.
