Method

  1. Heat a large griddle or frying pan over a high heat. In a large bowl, combine the orange segments and juice, mint leaves, vinegar and olive oil. Season, then gently toss together.

  2. Slice each block of halloumi into 8-10 pieces, then griddle or fry for 1-2 mins on each side until charred and beginning to melt.

  3. Add the walnuts and salad leaves to the orange and mint, then toss together. Top with the griddled halloumi slices and season with some black pepper.

Had this for lunch on a humid Spring day with homemade bread - really refreshing and tasty. The oranges really make this and we love halloumi cheese. As there are only 2 of us, I made this for lunch one day and the Summer Couscous salad the next evening as it uses up the rest of the cheese.

Made mine as a side, so no meat. I suspect that had I added mint i'd be giving this 4 or 3 stars instead of 5. No idea why u would add mint to such a salad, so I didn't. Consequently, 5 stars, no question. I did not season with salt or seasoning with salt as the halloumi is quite salty already. I was sceptical about the orange, but very pleasantly surprised; it all combined well.

Made this twice so far - 1st time I had only watercress at hand. 'twas okay, but lacked some final kick so I decided to add rocket 2nd time. Turned out really nice, fruity and refreshing (I simply love fruit/cheese combo). Kids complained that the oranges were too soggy and were rather unimpressed by watercress bit, but they're in general rather picky eaters

I made this for a starter at a dinner party and it worked beautifully- a few of my friends were new to halloumi but they were soon converted. Very easy to make, though make sure the oil is well heated for the halloumi before cooking, else it will stick and fall apart.
