  • 300g plain flour
  • 1 tbsp baking powder
  • 100g caster sugar
  • 100g unsalted butter
  • 2 large eggs
  • 200ml semi-skimmed milk
  • 150g fresh raspberries
  • 100g white chocolate


    1. Preheat oven to 200C/400F/gas mark 6. Line your muffin tin with ten paper cases.
    2. Sieve the flour and baking powder into a large bowl. Add the sugar.
    3. Melt the butter.In a separate bowl, whisk together the eggs and milk. Pour the melted butter and the egg mix into the flour. Stir but take care not to over mix.
    4. Stir in half the raspberries. Cut the white chocolate into small chunks and stir them into the mix.
    5. Spoon the mixture between the cases. Dot with the remaining raspberries. Cook for 15-20 minutes until golden. Let the muffins cool a little before tucking in.

i agree i also made these muffins and they tasted awful i think it should say tea spoon not table spoon of baking powder, also the white chocolate sank to the bottom, i make muffins regularly and never before have they turned out the way these did, i was making them for my sons schools fete utterly dissapointed!

I have just made these and altough light and fluffy they taste awful. Think it should say tps not tbs for the baking powder!!!

Brilliant! I used stork instead of butter, because thats all I had and frozen raspberries for the same reason! They were still amazing and I will be trying other kinds of muffins using this recipe.

Absolutely delicious!! Very easy, very quick and without doubt the nicest result of many muffin recipes I've tried - scrummy!

These are gorgeous, I make them for the coffee shop where I work and they don't last very long.....I drip some melted white choc over the top just to finish off
