  1. Finely chop the onion. Heat 2 tablespoons of olive oil and a knob of butter in a pan, add the onions and fry until lightly browned (about 7 minutes). Add the bacon and fry for a further 5 minutes, until it starts to crisp.

  2. Add the rice and stock, and bring to the boil. Stir well, then reduce the heat and cook, covered, for 15-20 minutes until the rice is almost tender.

  3. Stir in the peas, add a little salt and pepper and cook for a further 3 minutes, until the peas are cooked. Serve sprinkled with freshly grated parmesan and freshly ground black pepper.

I have never made risotto before, thinking it was difficult and time consuming, but this was SO simple and delicious.... it has became a favourite meal in our house and I am adding more ingredients every time.

Delicious. I used shelled broad beans instead of peas as I have a glut of broad beans at the moment. It was a little salty but this may have been the bacon I used which I must admit wasn't the best bacon you can buy.

Really enjoyed this. First time I'd ever cooked risotto! Used mushrooms as well and it was just lovely. I followed the recipe exactly, except for not adding any extra salt, the bacon and stock combination is salty enough. Me and the OH really enjoyed it, and it's not often we both really like a dish! This recipe will become a keeper.
