Method

  1. Finely chop the onion. Heat 2 tablespoons of olive oil and a knob of butter in a pan, add the onions and fry until lightly browned (about 7 minutes). Add the bacon and fry for a further 5 minutes, until it starts to crisp.

  2. Add the rice and stock, and bring to the boil. Stir well, then reduce the heat and cook, covered, for 15-20 minutes until the rice is almost tender.

  3. Stir in the peas, add a little salt and pepper and cook for a further 3 minutes, until the peas are cooked. Serve sprinkled with freshly grated parmesan and freshly ground black pepper.

Id never made risotto before as i thought id mess it up, but this was very easy as i didnt have to keep adding the water, it just went in all in one go. I used smoked bacon to add a little more flavor. It was very nice and easy to make, and had all my housemates hanging their noses over it whilst i was eating. shall definatly make more for everyone next time :)

This is a real comfort food recipe. I used my homemade chicken stock and used leeks instead of onion. Both the veg stock recipe and chicken stock recipe are equally yummy. Give it a go.

First time risotto maker and it was easy to do but perhaps next time will use smoked bacon for extra flavor but it was yum!!

I can't remember if I have rated this one before, but it's really very good, served for lunch with a green leaf salad. Guests asked for seconds. Very tasty and very easy.

Absolutely love this one in our house! Uses basic store-cupboard ingredients to make a very tasty risotto. We mix in some grated parmesan just before taking it off the heat.
