Tom Kerridge: How to make perfect poached eggs
Poached eggs can be a conundrum for cooks. Watch Tom Kerridge show you his three-step method that delivers the perfect set white and runny yolk every time.
Points to remember
- Start with really fresh eggs. Crack into a cup and add a splash of vinegar to each.
- Bring a pan of water to the boil. When boiled, give it a stir in a gentle, slow circular motion.
- Drop the eggs into the water, then turn the heat off and leave them for 4-5 minutes. Gently lift them out with a slotted spoon.

Either malt or white wine vinegar will work well.
