- 2 Cups Corn Meal
- 2 Cups Plain Flour
- 1 Tbsp Baking Powder
- 1 Tsp Salt
- 1 Cup Sugar
- 2 Eggs
- 2 Tsp Vanilla
- 1 Cup Butter
- 2 Cups Milk
Method
- STEP 1Preheat oven to 205°C
- STEP 2In a medium sized bowl, mix the flour, corn meal, salt, and baking powder.
- STEP 3In a separate, larger bowl blend the butter and the sugar together until fluffy with a hand mixer. Beat in one egg at a time until well-incorporated and then add the vanilla.
- STEP 4Alternate adding the dry ingredients and the milk in thirds. Once the ingredients are mixed, pour into a greased baking pan and bake for 35-40 minutes or until a fork comes out of the centre clean.
