A pad thai for lazy people who don't want to make a pad thai sauce.

  • 125g rice noodles
  • 100g bean sprouts
  • 1 carrot, peeled and sliced
  • 80g baby spinach
  • The juice of one lime
  • 50g peanuts, diced
  • 25g sesame seeds
  • Rapeseed oil
  • Dried chillies


  1. Heat some rapeseed oil in a large frying pan and sprinkle some dried cherries into the oil.

  2. Shallow fry the carrot and bean sprouts in the oil. A few minutes before they are cooked, add the rice noodles and stir fry them.

  3. Just before serving, stir the spinach into the mix so it wilts, and mix in the lime juice, sesame seeds, and peanuts.
