Salmon stew for working mothers

An absolute no-brainer which still has a fabulous flavour. The brief cooking time is just long enough for the tomatoes to burst and their juices mingle with those of the salmon to make a kind of fish stew for zero effort. Also super-quick so when you are completely exhausted you can still eat healthily.

- 2 Salmon fillets (organic is best)
- 14 Cherry tomatoes (or 1 pack; I use on the vine)
- Salt (Maldon's sea salt is excellent)
- 1 Garlic clove
Method

Place salmon fillets on a microwaveable plate, skin side down.step 2
Balance cherry tomatoes on top, removing stalks.step 3
Skin garlic clove and chop very finely, then sprinkle over the fish and tomatoes.step 4
Finish with a good pinch of salt.step 5
Cover and microwave for 3-4 minutes, depending on power, until the fish is just cooked.
