  • 230g Plain flour
  • 100g soft brown sugar
  • 110g golden syrup
  • pinch salt
  • 1tsp bicarbonate of soda
  • 1 heaped tsp ground ginger
  • 3/4 tsp cinnamon
  • 80g unsalted butter (you can add a little more if you prefer a more sticky dough)

    Method

    • step 1

      Pre-heat the oven to 180°C (approx gas 5) and grease 2 large baking trays
    • step 2

      Mix together the flour, sugar, salt, bicarbonate of soda, ginger and cinnamon in a bowl
    • step 3

      add the golden syrup and the butter and mix together well until it forms a soft workable dough. (If it is too crumbly you can add a little more butter, or if it is too sticky add a little more flour)
    • step 4

      Roll out the dough on a lightly floured surface to about 1cm thick and use a cutter of your choice to cut them into shapes
    • step 5

      Lay out the shapes on the baking trays allowing a little room for them to expand
    • step 6

      Cook for around 10-15 minutes depending on how chewy you want them (the longer time the harder they will be)

    LOVED this recipe, so so tasty and chewy. took me 2 hours rather than 10 minutes, not sure how its possible to magically manifest them in that time, but i'm sure someone could manage it. Will definitely become my main gingerbread recipe

    This is excellent. As others have said: twice the ginger needed. Also experimented with different oven time. They turn out well left for slightly less time or slightly longer (nice colour on the edges). Merry Christmas!
