Tasty Chewy Gingerbread Biscuits

Simple recipe to make slightly chewy centred gingerbread biscuits.

  • 230g Plain flour
  • 100g soft brown sugar
  • 110g golden syrup
  • pinch salt
  • 1tsp bicarbonate of soda
  • 1 heaped tsp ground ginger
  • 3/4 tsp cinnamon
  • 80g unsalted butter (you can add a little more if you prefer a more sticky dough)


  1. Pre-heat the oven to 180°C (approx gas 5) and grease 2 large baking trays

  2. Mix together the flour, sugar, salt, bicarbonate of soda, ginger and cinnamon in a bowl

  3. add the golden syrup and the butter and mix together well until it forms a soft workable dough. (If it is too crumbly you can add a little more butter, or if it is too sticky add a little more flour)

  4. Roll out the dough on a lightly floured surface to about 1cm thick and use a cutter of your choice to cut them into shapes

  5. Lay out the shapes on the baking trays allowing a little room for them to expand

  6. Cook for around 10-15 minutes depending on how chewy you want them (the longer time the harder they will be)

Wished I'd read the tip here before I baked! The cinnamon over-powered the ginger. Biscuits are lovely but cinnamony not gingery. Increase ginger and/or decrease cinnamon would be my tip

I have just made these. I doubled the amount of ground ginger (plus another sprinkle) then I added chunks of fresh ginger to it aswell I also used an extra 20g butter. Only cooked them for 10 mins in fan assisted oven at 160c . Turned out very nice soft and gingery. Still could of done with more ginger :-)

Very nice biscuit recipe. But, I doubled the amount of ground ginger. I'm glad I did - any less and it would have been too mild for my taste.
