  • 1 tablespoon butter
  • 1 large onion, thinly sliced
  • 1 1/2 teaspoons sugar
  • 1 tablespoon plain flour
  • 400ml hot beef stock, from a stock cube

    Method

    • step 1

      Heat the butter in a large frying pan. Add the onion and sprinkle with the sugar, then cook gently, stirring occasionally, for 10 to 15 minutes or until the onion is soft and lightly caramelised.
    • step 2

      Sprinkle the flour over the onion, stir and cook for 1 minute. Gradually stir in the stock. Bring to the boil, then reduce the heat and leave to simmer gently until thickened.

    BBCgf always my go to for recipes, usually receive 5 stars but felt a bit let down by this one. Didn’t add any sugar as I find onions sweet enough when cooked down, so glad I didn’t.     I only added one teaspoon of sugar. Also I found I needed to add an extra tablespoon of flour to make the gravy thick enough. Very tasty though!

    is this a gravy that can be made say a day before, and reheated?

    Absolutely. It also freezes very well. I always make a large batch and then freeze it in portions so that I don't have to make it from scratch every time (not that it's difficult or anything!)
