Salmon patties with mango salsa

Ingredients
Salmon patties
- 1 garlic clove peeled
- 500g fresh of tinned salmon roughly chopped
- 1/2 diced red onion
- 50g dry breadcrumbs
- 1 egg
- 25g chopped coriander
Mango salsa
- 1 garlic clove peeled
- 500g fresh of tinned salmon roughly chopped
- 1/2 diced red onion
- 50g dry breadcrumbs
- 1 egg
- 25g chopped coriander
- 60ml lemon juice
- 1 medium to large mango
- 1 tbsp sweet chilli sauce
- 1 tbsp sweet chilli sauce (optional)
- 1/2 diced red onion
Method
- STEP 1Place the garlic, onion and salmon in a food processor and blend until mixed. Add the breadcrumbs, egg and coriander. Season to your desire and blend again.
- STEP 2Divide salmon mixture into eight equal portions. Shape the patties and refrigerate for 30 minutes.
- STEP 3For the salsa place the mango, 2 tablespoons of lime juice, onion, coriander and sweet chilli sauce into a bowl and mix together well.
- STEP 4Add the remaining lime juice to a fry pan and cook the patties for 4-5 minutes on each side, do not overcrowd the pan.
- STEP 5Serve hot or cold with the mango salsa on the side for a delicious summery dish.
