Ingredients

Salmon patties

  • 1 garlic clove peeled
  • 500g fresh of tinned salmon roughly chopped
  • 1/2 diced red onion
  • 50g dry breadcrumbs
  • 1 egg
  • 25g chopped coriander

Mango salsa

  • 1 garlic clove peeled
  • 500g fresh of tinned salmon roughly chopped
  • 1/2 diced red onion
  • 50g dry breadcrumbs
  • 1 egg
  • 25g chopped coriander
  • 60ml lemon juice
  • 1 medium to large mango
  • 1 tbsp sweet chilli sauce
  • 1 tbsp sweet chilli sauce (optional)
  • 1/2 diced red onion

Method

  • STEP 1
    Place the garlic, onion and salmon in a food processor and blend until mixed. Add the breadcrumbs, egg and coriander. Season to your desire and blend again.
  • STEP 2
    Divide salmon mixture into eight equal portions. Shape the patties and refrigerate for 30 minutes.
  • STEP 3
    For the salsa place the mango, 2 tablespoons of lime juice, onion, coriander and sweet chilli sauce into a bowl and mix together well.
  • STEP 4
    Add the remaining lime juice to a fry pan and cook the patties for 4-5 minutes on each side, do not overcrowd the pan.
  • STEP 5
    Serve hot or cold with the mango salsa on the side for a delicious summery dish.
