  • 4 large vine tomatoes, cut into irregular wedges
  • 1 cucumber, peeled, deseeded, then roughly chopped
  • ½ a red onion, thinly sliced
  • 16 Kalamata olives

  1. Place 4 large vine tomatoes, cut into wedges, 1 peeled, deseeded and chopped cucumber, ½ a thinly sliced red onion, 16 Kalamata olives, 1 tsp dried oregano, 85g feta cheese chunks and 4 tbsp Greek extra virgin olive oil in a large bowl.

  2. Lightly season, then serve with crusty bread to mop up all of the juices.

Delicious and easy to prepare. Bought fresh kalamata olives but unfortunately weren't pitted. Still, a delicious salad. Love the juices.

So lovely I've made this twice recently. I served it with bbc good food's lamb koftas and a homemade yoghurt and mint dip. Will be a regular feature on my meal planner!

Love this recipe, always come back to it. Haven't tried the lemon juice, will add it next time. Another tip for the onion, if you don't like it too strong, is to soak in cold water for a short while. Tastes better for letting it stand for a while before serving, to let the flavours combine.

Really easy to make. I omitted the olives as we don't like them and substituted sun dried tomatoes. Interested to see people's comments about lemon juice - May try that next time.
