Method

  1. Heat oven to 180C/160C fan/gas 4. Put the salmon in a large roasting tin, leaving space between each fillet.

  2. Wash and drain the broccoli and, while still a little wet, arrange in the tray around the fillets. Pour the lemon juice over everything, then add the lemon quarters.

  3. Top with half the spring onions, drizzle with a little olive oil and put in the oven for 14 mins. Remove from the oven, sprinkle everything with the soy, then return to the oven for 4 mins more until the salmon is cooked through. Sprinkle with the remaining spring onions just before serving.

So simple and quick. I used Light Soy sauce so as not to overpower the delicate flavours of the salmon and broccoli and the result was delicious.

This was really tasty, added sesame oil, ginger and bit of chilli for more flavour. Steamed the broccoli for a few minutes too. It was light and husband liked it a lot!

I was worried this might be a bit bland, so sprinkled a handful of chopped fresh chili and ginger over the salmon before baking. I also added a drizzle of honey with the soy sauce for a little sweetness. I like my broccoli crunchy and roasted, so the cooking time worked really well for me! Really easy and quick recipe for a midweek meal.

I wish I had read the comments before cooking, that way I would have pre-cooked my broccoli! I thought the lemon was slightly overpowering and it needed more soy sauce. Very easy though, and you can't really go wrong with salmon.

Just made this and it was delicious. Ridiculously quick and easy to put together. Served mine with cous cous and topped with a little cream cheese on top. Didn't pre cook the broccoli as I like it quite crunchy, but if you prefer your veg softer you will definitely need to pre cook it!
