  • 100g couscous

  • 200ml hot low salt vegetable stock (from a cube is fine)
  • 2 spring onions

  • 1 red pepper
  • ½ cucumber
  • 50g feta cheese, cubed
  • 2 tbsp pesto



    Pesto is a generic Italian name for any sauce made by pounding ingredients together.


  • 2 tbsp toasted pine nuts


  1. Tip the couscous into a large bowl and pour over the stock. Cover, then leave for 10 mins until fluffy and all the stock has been absorbed. Meanwhile, slice the onions and pepper, and dice the cucumber. Add these to the couscous, fork through the pesto, crumble in the feta, then sprinkle over pine nuts to serve.

I roast the pepper and add lots of parsley. I also prefer chicken stock

Very delicious and easy to make. Just made small adjustments - less red pepper and more cheese. Very good!

I made this for our evening supper on Christmas day. It went down a storm, my ten year old loved it (surprised me!) and my brother said it was the nicest couscous he'd ever had. Really simple and very tasty.

A really simple, tasty recipe. Did anyone else think 200ml of liquid was too much for the couscous though? I will use a little less next time.

Love this recipe. Great as a side salad for a BBQ or occasion, or as a meal on its own. Tend to make a double batch for lunch boxes etc. Made for a few family gatherings and always goes down well.

Really simple and nice. Used roasted pumkin and sunflower seeds instead of pine nuts.

Really delicious!! I used quinoa as I'm gluten intolerant, used chicken stock & added sliced, marinated chicken breasts. So good, will definitely be making again!

Love this simple salad, it's quick to make and full of flavour. We substituted mozarella for the feta and it worked just as well. Definitely a recipe to keep.
