Roasted vegetables with turmeric rice

Rosie Birkett transforms basmati rice into a filling vegetarian dinner. Watch her make roasted cauliflower and courgette with spiced turmeric rice.

This week Rosie Birkett is challenged to make a meal from scratch using rice as the main item. She makes a super easy rice based dish packed with turmeric and golden roasted vegetables, and she even makes her own homemade chilli oil.

Hello, The amounts for the chilli oil are as follows: I red chilli, finely chopped, a knob of ginger, finely chopped, 1 garlic clove, finely chopped, 4 tbsp vegetable oil, 1 tsp chilli flakes, 1 tbsp soy sauce, 1 tbsp sesame seeds. To make the chilli oil, combine the chilli, garlic, ginger and oil in a frying pan and put the pan over a low heat, slowly bring it up to a medium heat, stirring with a spatula. When the ingredients are sizzling and the garlic is starting to turn gold, this will take a couple of mins, pour it into a bowl and stir in the chilli flakes, soy and sesame. Lulu

How much soy, dried chilli flakes and sesame seeds do you add to the chilli oil and do you do this after heating. It skips this stage in the video?

This looks really tasty and clearly explained. I’ll give it a go later and report back. Just a quick idea, would it be possible to have the ingredients and method also written? It would make shopping and cooking it easier.

Hi can you tell me the quantities for the dried red chilli, sesame seeds and soy sauce for the chilli oil? It just skips past that. Also how much dried rice did you add?
