  • 100g chorizo, diced
  • 1 onion, diced
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 225g dried linguine


  1. Cook the linguine in boiling water for about 10-12 minutes, according to packet instructions.

  2. Heat a pan and fry the chorizo for about 2 mins until oils are released. Add onion and fry for 3 mins, then add peppers. Fry for a further 5 mins, stirring occasionally. Add seasoning as required.

  3. Drain the pasta and mix well with the chorizo and veg mixture. Transfer pasta onto plates and top with any chorizo and veg left in the pan. Optional - sprinkle with grated parmesan and / or chilli flakes.
