Ingredients

  • 100g chorizo, diced
  • 1 onion, diced
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 225g dried linguine

Method

  • STEP 1
    Cook the linguine in boiling water for about 10-12 minutes, according to packet instructions.
  • STEP 2
    Heat a pan and fry the chorizo for about 2 mins until oils are released. Add onion and fry for 3 mins, then add peppers. Fry for a further 5 mins, stirring occasionally. Add seasoning as required.
  • STEP 3
    Drain the pasta and mix well with the chorizo and veg mixture. Transfer pasta onto plates and top with any chorizo and veg left in the pan. Optional - sprinkle with grated parmesan and / or chilli flakes.
