Mini Baked Bakewell Tart Doughnuts

Ingredients
Doughnut Batter
- 225g plain flour
- 175g caster sugar
- 1 TBSP Melted Butter
- 2 TSP Baking Powder
- 175ml Milk
- 2 eggs, beaten
- 1 TSP Almond Extract
Bakewell Topping
- 225g plain flour
- 175g caster sugar
- 1 TBSP Melted Butter
- 2 TSP Baking Powder
- 175ml Milk
- 2 eggs, beaten
- 1 TSP Almond Extract
- 5 TSP Warmed Jam
- Flaked Almonds
- Icing Sugar, Sieved
Method
- STEP 1Preheat the oven to 160C/gas 4. Grease a mini doughnut pan. Mix together all the batter ingredients in a mixer until smooth.
- STEP 2Pour the batter into the doughnut holes until each well is around three-quarters full. Add a teaspoon of jam, in a circle, over each doughnut, then top with a couple of flaked almonds. Bake for 10-12 mins.
- STEP 3For the icing, mix the icing sugar with cold water until it is a runny consistency. Once the doughnuts are cool, drizzle over with the icing.
