Doughnut Batter

  • 225g plain flour
  • 175g caster sugar
  • 1 TBSP Melted Butter
  • 2 TSP Baking Powder
  • 175ml Milk
  • 2 eggs, beaten
  • 1 TSP Almond Extract

Bakewell Topping

  • 5 TSP Warmed Jam
  • Flaked Almonds
  • Icing Sugar, Sieved


  1. Preheat the oven to 160C/gas 4. Grease a mini doughnut pan. Mix together all the batter ingredients in a mixer until smooth.

  2. Pour the batter into the doughnut holes until each well is around three-quarters full. Add a teaspoon of jam, in a circle, over each doughnut, then top with a couple of flaked almonds. Bake for 10-12 mins.

  3. For the icing, mix the icing sugar with cold water until it is a runny consistency. Once the doughnuts are cool, drizzle over with the icing.
