Ingredients
Doughnut Batter
225g plain flour
175g caster sugar
1 TBSP Melted Butter
2 TSP Baking Powder
175ml Milk
2 eggs, beaten
1 TSP Almond Extract
Bakewell Topping
225g plain flour
175g caster sugar
1 TBSP Melted Butter
2 TSP Baking Powder
175ml Milk
2 eggs, beaten
1 TSP Almond Extract
5 TSP Warmed Jam
Flaked Almonds
Icing Sugar, Sieved
Method
STEP 1
Preheat the oven to 160C/gas 4. Grease a mini doughnut pan. Mix together all the batter ingredients in a mixer until smooth.
STEP 2
Pour the batter into the doughnut holes until each well is around three-quarters full. Add a teaspoon of jam, in a circle, over each doughnut, then top with a couple of flaked almonds. Bake for 10-12 mins.
STEP 3
For the icing, mix the icing sugar with cold water until it is a runny consistency. Once the doughnuts are cool, drizzle over with the icing.
