Tomato based Moroccan casserole with chicken drumsticks served with cous cous

  • Chicken drumsticks
  • 2 tsp cinnamon
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 2 tins chopped tomatoes
  • 1 tin chickpeas
  • handful of apricots
  • chopped carrots
  • chicken stock


  1. Fry chicken drumsticks in oil til lightly golden

  2. Add the spices (cinnamon, cumin, ground coriander)

  3. Add the tins of chopped tomatoes, some water, chickpeas, apricots and carrot chunks. Then add chicken stock.

  4. Place in the oven for 1 hour

  5. Serve with cous cous
