Ingredients
- Chicken drumsticks
- 2 tsp cinnamon
- 1 tsp cumin
- 1 tsp ground coriander
- 2 tins chopped tomatoes
- 1 tin chickpeas
- handful of apricots
- chopped carrots
- chicken stock
Method
- STEP 1Fry chicken drumsticks in oil til lightly golden
- STEP 2Add the spices (cinnamon, cumin, ground coriander)
- STEP 3Add the tins of chopped tomatoes, some water, chickpeas, apricots and carrot chunks. Then add chicken stock.
- STEP 4Place in the oven for 1 hour
- STEP 5Serve with cous cous
