  • Chicken drumsticks
  • 2 tsp cinnamon
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 2 tins chopped tomatoes
  • 1 tin chickpeas
  • handful of apricots
  • chopped carrots
  • chicken stock

    Method

    • step 1

      Fry chicken drumsticks in oil til lightly golden
    • step 2

      Add the spices (cinnamon, cumin, ground coriander)
    • step 3

      Add the tins of chopped tomatoes, some water, chickpeas, apricots and carrot chunks. Then add chicken stock.
    • step 4

      Place in the oven for 1 hour
    • step 5

      Serve with cous cous
