Chicken and Chorizo Paella

Delicious seafood-free version of the classic paella

  • 400-500g chicken mini fillets
  • 4 tbsp olive oil
  • 1 large onion, finely chopped
  • 1 garlic clove, crushed
  • 1 tsp ground turmeric
  • 115g chorizo sausage, peeled
  • 225g long grain rice
  • 600ml chicken stock
  • 4 tomatoes, skinned, seeded and chopped
  • 1 red pepper, seeded and sliced
  • 115g frozen peas
  • salt and black pepper


    1. Heat the oil in a large non-stick pan and brown the chicken on both sides. Add the onion and garlic, and stir in the turmeric. Cook for 2 minutes.
    2. Slice the chorizo and add to the pan with the rice and stock. Bring to the boil and season to taste, then cover and continue to cook on a medium heat for 15 minutes.
    3. Add the chopped tomatoes, sliced red pepper and frozen peas, and cook for a further 10 minutes or until the chicken is tender and the rice has absorbed the stock.

Very Tasty and loved by all the family, not a grain of rice left :) Only improvement for our taste would be to pop the Chorizo in slightly earlier before the liquid as we like the edges lightly crisped, but personal preference.

Came across this page by mistake & thought it sounded delicious. I checked what I had at hand & had all but turmeric & chorizo so went to the local supermarket, got the chorizo but no turmeric anywhere in sight, so used the smoked paprika that I had in the cupboard & some chilli flakes - Oh, & used some cherry tomatoes. I made easily enough for 4+ but the lot got devoured my the good lady & I. We sat looking at each other thinking; There's just no way we could put this away in one session! Needless to say, every grain of delicious rice went down the hatch! PS, Neither of us had ever tasted Paella before! Stevie

My boyfriend and I absolutely love this recipe! We've made it about 4 times now and it tastes great every time. The only things we've changed is, like the person above, we use 2 cloves of garlic and we also add approx an extra 100ml of stock. I think for anyone who loves Paella but without the seafood, this is ideal and so easy to make!

Absolutely delish! Mine was turning into a bit of a risotto but still tasted great,very easy,give it a go!

I added 2 cloves of garlic instead of 1 cause we LOVE garlic in our house. It was a huge success with the whole family, seconds were even requested!
