Chicken

  • 2 chicken breast
  • 50g breadcrumbs
  • 1 tbsp. flour (may need more)
  • 1 egg

Sauce

  • 2 chicken breast

  • 250ml Chicken Stock
  • 1/2 cup lemon juice
  • 3/4 cup sugar
  • 1/4 cornflour
  • 1 lemon zest

    Method

    • step 1

      Preheat oven to 200 degrees. Break egg into a bowl and mix with a fork. Put flour on to a plate. Put bread crumbs on to another plate.
    • step 2

      Chop chicken in to bitesize pieces. Cover chicken pieces in egg, then in flour, and then in the bread crumbs. Place on to a baking tray and cook for 15-20 minutes until golden and crispy
    • step 3

      Put the hob on and heat a sauce pan. Put the chicken stock in the pan and bring to the boil. Then take off boil to add the lemon juice, sugar and lemon zest. Return to the boil. Mix the corn flour into some water and then add that to the sauce. Heat till thickenen. Then Serve everything hot.
